Crafting Artisan Spirits in the Heart of Yass Valley
The Still House has been established in the locality of Marchmont, in the Yass Valley. Marchmont is named after the land owned by explorer Hamilton Hume and has been grazed by ultra fine merino sheep for over a hundred fifty years. Marchmont is perfect for creating and aging craft spirits with hot blazing summers baking the native grass lands, followed by howling cold winter winds ripping down from the nearby Brindabella Ranges. Fast forward 150 years and the term Ultra Fine now also refers to hand made craft spirits.
The Distillery
The Distillery uses a custom 330L pot still named “Thelma” and a test still “Joan”. The still’s are named after our grandmothers who both lived into their 90’s and who had highly developed palettes for good liquor. The all copper pot stills ensure a high quality product with a unique style of its own.
Our Water
Our elevation and location provides us with a clean rain water source that blows in from the Brindabella Ranges. All our rainwater is filtered and provides our products with flavour only good rain water can provide.
Our products use Australian wheat spirit plus a combination of traditional and Australian botanicals.
