It’s worth sharing a bit of detail about our primary still “Thelma” and our test still “Joan”.

More copper the better. Our primary still is a custom made all copper still. Copper is not only a great conductor of heat but also removes unwanted compounds from the distillate producing a cleaner flavour.

Vapor Infused Botanicals. The still is fitted with an onion head in the vapor path that is filled with botanicals. Vapor infusion allows the distillate vapor to collect flavours as it passes through the onion head providing a full flavoured spirit.

Circulated Rainwater. We collect all water used in the stilling process that is filtered through a four stage filter. Cooling water used for the still, is a closed system that circulates water back to the rainwater tank underground to remove any heat from the distilling process.
